Honey Glazed Carrots

I think these tasty little carrots are a great addition to any plate.  They add some healthy vegetables with a hint of sweetness and their bright orange can make any dull plate pop with color.


2 to 3 cup carrots, either peeled and chopped or baby carrots
1/4 cup butter
1 Tablespoon brown sugar
1 Tablespoon honey
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 Tablespoon dried parsley and/or chives
In a skillet with a lid, melt butter.  Add brown sugar, honey, nutmeg and cinnamon, mixing well.  Add carrots.  Cover and cook on medium heat for about 15 minutes, stirring occasionally (hint: the carrots should still be firm after cooking, not mushy).  Add parsley and/or chives a few minutes before finished cooking.
