Healthy Zucchini Bread

With gardening season on the way, here is a healthy and delicious way to use up some of your fresh zucchini!


1/2 cup sugar
1 cup brown sugar
3 eggs
1/2 cup oil
1/2 cup applesauce
2 cups grated zucchini
3 teaspoons vanilla

Combine the above ingredients in a bowl and mix well.
2 cups white flour
1 cup wheat flour
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons cinnamon

Sift the ingredients together and add to the zucchini mixture.  Blend well.
Add 1/2 cup nuts and/or 1/2 cups chocolate chips if desired.
Bake in two lightly greased bread pans at 350F for 1 hour or until a toothpick or knife inserted in the center comes out clean.  Be sure not to overbake.  Cool on a wire rack for a few minutes, then remove the loaves.  Slice and serve warm or freeze for later use.  Better yet, make new friends and share!
