Fried Green and Red Onions

If I'm in a hurry but still want to make sure my family gets a side of veggies for dinner, I frequently turn to this unadorned but tasty side.


1 bunch green onions, chopped into 1 inch pieces
1/4 red onion, finely chopped
1 Tablespoon olive oil
Salt, pepper or Mrs. Dash seasoning to taste

Stir the ingredients in a pan over medium high heat.  Cook until veggies are tender but not mushy.  Serve as a side or over a baked potato.
