1/2 cup butter, softened
3/4 cup brown sugar
1 teaspoon vanilla
3 very ripe bananas
2 cups flour
1/4 cup + 2 Tablespoons cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup white chocolate chips, 1/4 reserved
Preheat oven to 350F. Line muffin tin with paper cups and spritz with cooking spray. In a large bowl, cream together butter and sugar. Add in eggs, bananas and vanilla, beating until well combined.
Combine flour, cocoa, baking soda and salt, blending well into the banana mixture.
Fold in 3/4 cup of the white chocolate chips.a toothpick inserted into the center will not necessarily come out clean due to the banana--be careful not to over bake).
