1 cup creamy or chunky peanut butter
2/3 cup brown sugar
1 Tablespoon molasses
1 1/2 teaspoon vanilla
2 large eggs
2/3 cup rolled oats
1 teaspoon baking soda
2/3 cup chocolate chips
Preheat oven to 350F. In a small bowl, toss together the oats and baking soda. Set aside. In a larger bowl, beat together the peanut butter, brown sugar, eggs and vanilla until smooth. Fold in dry ingredients. Gently stir in chocolate chips.
a cookie scoop may be used instead since the dough will be very sticky). Bake 9 to 11 minutes or until edges begin to turn a golden brown. Cool two minutes on the cookie sheet and transfer to a wire rack.
