This is a wonderful recipe for summer. Not only can you use up a bumper crop of cucumbers but it's a cool salad that will balance out grilled main dishes.
2 medium cucumbers, sliced
1 medium onion, sliced in rings
1/2 cup sour cream or Greek yogurt
1 Tablespoon sugar
1 Tablespoon lemon juice
1 teaspoon salt
1 teaspoon sesame seed
Dash of pepper
Stir together all but the cucumbers and onions. Pour over the veggies and toss to coat. Chill at least twenty minutes (or longer).
