Red Beans and Rice

One of my favorite low calorie dinners because it doesn't skimp on flavor and it's ready in less than half an hour.  It makes an ample recipe so we've got leftovers for a few days which is great--it reheats nicely.  Serve without sausage to make vegetarian.

Red Beans and Rice

Ingredients:

2 cans red kidney beans, undrained
2 cups water
5 polish dogs, sliced
1 onion, chopped
4 teaspoons minced garlic
1 teaspoon Cajun or Creole seasoning (optional)
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon ground cinnamon

In a large pan with a lid, combine all ingredients.  Bring to a boil then reduce heat and simmer for 15 to 20 minutes or until the onion is tender and everything is heated through.  Serve over steamed rice.
