Cranberry Almond Salad

Wanting something different, we had this salad for dinner. Crunchy, sweet, filling, quick? Yep! Enjoy!


16 ounces baby spinach and/or lettuce
1 cup sliced almonds, toasted
1 cup dried cranberries

Seasame Seed Dressing
2 Tablespoons white vinegar
1 Tablespoon apple cider vinegar
1 1/2 Tablespoons white sugar
1/4 cup olive oil
1 1/2 Tablespoon honey
1/2 Tablespoon finely minced green onion or shallot
1 Tablespoon sesame seeds, toasted

Whisk the vinegars and sugars until dissolved. Whisk in olive oil, honey, shallot, and sesame seeds until well blended. Toss together the salad ingredients and drizzle the dressing over the top and toss again. Serve immediately.
